Oh Hello Sweet Potato!

If you find yourself struggling to just put down those hot potato chips at the dinner table and wished that there was a healthier alternative that tasted just as good, then you’re in luck!

Sweet potatoes are not only highly nutritious packed with potassium, vitamins A, C & B6 but also great for healthy weight loss support, healthy skin, is anti-cancerous, reduces cholesterol levels and improves prostate health.

Nutritional benefits of sweet potatoes may be maintained if you steam or boil sweet potatoes. Preservation of anthocyanins remains high when steamed or boiled which has a better effect on sugar levels. This includes achieving lower glycemic index or GI values.

Sweet potatoes also contain a considerable amount of fibre. Studies have shown that type 1 diabetics who consume high-fibre diets have lower blood glucose levels and type 2 diabetics may have improved blood sugar and insulin levels.

The orange colour in sweet potatoes are an indication of the presence of beta-carotene, which is then converted into Vitamin A. The vitamin A in sweet potatoes outnumbers those present in green leafy vegetables. The vitamin C and B6 content is also quite impressive, with 65% recommended daily value of vitamin C and 29% daily value for vitamin B6, this vegetable is a great all rounder!

There are a few easy ways to incorporate sweet potatoes in your diet. Slice thinly and coat with coconut oil and season with Himalayan salt and pepper and place it in the oven for about 15 minutes at 175 degrees (as pictured above). You could also roast them in big chunks or make mash sweet potato! Basically you can create any potato dish with this amazing sweet goodness!
